Whipped Ricotta over Fruit

This is a wonderful desert. Extremely healthy with great calcium from the ricotta and enough sweetness to make you feel like it is desert after dinner.

Make a simple syrup. Dissolve 2 tbs of sugar into about a cup of water. Then toss your blueberries or any other fruit you like in the simple syrup.

Then take one cup of ricotta and puree it in your food processor until it looks silky smooth like whip cream. Then add about 3 tsp of sugar into the ricotta mixture. Then add 2 tbs of orange zest. If you don't have a zester use the smallest grade on your grater. Then puree that a little bit longer.

Then put your blueberries in your serving dish and top with the ricotta cream. Then top with a strip of orange zest.

Its amazing trust me!!!! and healthy too !!!
