Mediterian Calzones

These calzones are delicious! Anyone that likes artichokes, roasted red peppers, olives, or feta cheese should try them. I would like to point out that these can be completely vegetarian if you just don't add the chicken like I did for dinner.

You should get your fixings together so you can build your calzones with ease like in the picture above. I got together about 1 cup of each so I could make 4 calzones. Chop up a cup of artichoke hearts, roasted red pepper, feta, roma tomato, a cup of cooked chicken, and a few calamata olives.

Then put 3 cups of spinach, 2 cloves of garlic minced, and 1 tbs of water in a microwave safe dish then steam in the microwave for 2 minutes. Once the spinach mixture is steamed through squeeze all the water out then mix in 1/2 cup of ricotta cheese.

Then cut your dough ball into 4 sections. Roll out one section then start assembling like in the picture above.


Once assembled pinch the edges together so nothing slips out then pop in the oven at 375 degrees they should only take 25 minutes to cook through. Keep an eye on them so they do not get to brown.
