Hummus

Hummus has got to be one of the best spreads, sandwich filler, salad topper, or snack there is. I love to make it from scratch now that I know how to do it. I must apologize for not posting for a couple of days. My two very best friends just got married yesterday and my husband and I were in the wedding party. So that meant a weekend full of crazy fun events and not much time to add posts. But have no fear there will be SO MUCH MORE TO COME!!!

Now on with the hummus! You will need Tahini (it can be a little pricey, but it is so worth as it lasts a long time), lemon, garlic, salt, olive oil, garbanzo beans.

In this recipe there is 2 cups of garbanzo beans or 2 cans of them. Just make sure you rinse them thoroughly before adding them. So in the mixture add the 2 cups of beans, 2 cloves or more if you like of garlic, 3 tbs of tahini, 4 tbs of lemon juice, 1/2 tsp of salt, 1/4 cup the cooking water from the beans or just regular water, 2 tbs of olive oil. This is a finicky recipe and you may have to play around a little with it to get the taste you are trying to achieve.

Once all the ingredients are together you puree it until it is at the consistency you like. Some people like thicker hummus some like smooth hummus the decision is yours.

Once it is to the consistency and the taste you like all you have left to do is enjoy it !!!
