Speaking of fall...

Speaking of fall check out this chicken, barley, and black eyed pea stew. It was amazing! My husband and I had it with a grilled cheese sandwich one night last week and it was very satisfying. It is so hearty, good for you, and filling on a day that the weather is in the low 50's like today. The recipe is courtesy of the most recent issue of Clean Eating issue and its amazing!

You start with put the following items into your crock pot -

* 32 oz chicken broth or if your making a veggie stew use the veggie stock
* 1 tbs of garlic minced
* 1 tsp of salt
* 1/2 tbs of thyme
* 1/2 tbs of basil
* 1/4 tbs of dill
* 1/2 tbs of cilantro (I did not add this because I did not have it, but I'm sure it will be delicious)
* 2 bay leaves
* salt and pepper


TIP: (Don't forget to use a liner if you have a porcelain crock pot. Over time the porcelain can crack due to the heat and that will create a hazardous issue at home while you are at work thinking dinner is cooking away.)



Then add the potatoes, chicken, onion, black eyed peas, and carrots. The following amounts will give you about four servings once cooked ...
* 2 chicken breasts trimmed and cut into cubes
* 1/2 cup of uncooked black eyed peas
* 1/2 cup of barley
* 1 onion chopped
* 2-3 red potatoes chopped into cubes
* 3 large carrots chopped

Set it on low for 8-10 hours and it will be delicious for a good warm meal at the end of the day...

It is the perfect early fall/winter meal!
