simple beef and mushrooms

Adapted from: The Pioneer Woman

I love simple recipes. There is nothing nicer that getting home from work and sitting down relaxing for a little but then getting out a few ingredients and going to town on a recipe in your kitchen. Then expecting it to take a lot longer than it actually did. Then plating it up and realizing this is an incredibly simple took next to no time and it is beyond satisfying.

Your ingredients:::

2 pounds Beef Stew Meat (sirloin Cut Into Cubes)
2 Tablespoons Flour
4 Tablespoons Butter
2 Tablespoons Olive Oil
2 whole Shallots, Minced
3 cloves Garlic, Minced
8 ounces, weight baby bella mushrooms

½ cups Red Wine
½ cans Beef Consomme
Salt And Pepper, to taste
Pasta - Cooked And Drained
2 sprigs Fresh Thyme

To thicken if need be:::
3 tbs of flour
1/4 cup of water

Start by taking your 2 tbs of olive oil and your 4 tbs of butter and melting them in a pan.

Then take your beef tips and add the 2 tbs of flour to it. Stir it up to coat each piece.

Then pan fry each of the beef pieces in your evoo/butter mixture. Don't flip them until the side that is facing down is golden brown. How do you know when that is you ask? Test a piece. If you pick one up and it is not brown enough place it back down and wait a little longer.

Once all the sides are golden brown they will be done enough on the inside. When that happens take them out and set them aside on a separate plate.

Then you are going have some brown bits and deliciousness at the bottom of your pan. Add in the 2 whole shallots and the 3 garlic cloves. Let it saute for a bit until it gets fragrant.

Then add in 1/2 a can of beef consomme (you can find this right in the soup aisle), 1/2 cup of red wine, the delicious mushrooms, the thyme, and oh I add some carrots because I needed a little color.

Let that simmer for a bit until the mushrooms and carrots soften a bit.

If you need to thicken it up a bit mix up 3 tbs of flour with 1/4 of hot water. Whisk it together with a fork then add it to the pot.

Add your beef tips back in then serve over egg noodles. I know it is not the traditional beef stew, but holy cow you won't regret creating this lovely meal.

Enjoy !!!
