Sherried Sardine Toast

I know I know....your thinking Sardines Kaleena? But, let me say this Sardines are full of all the omega-3 fatty acids you are looking for. This is a heavy hitting nutritional lunch that you wont regret trying soon. I have been turned off of sardines for quite sometime, but when I saw the simple and easy way Alton Brown prepared this recipe I knew I had to try it.

You start off with 2 cans of brisling sardines.


Open up those babies and drain the oil from one can in one small bowl. Then take the second tin of sardines and drain that oil in a separate bowl.


Take some tasty sherry vinegar and get ready to make things delicious.


In one of the bowls whisk in 1 tbs of parsley, 1 tbs of sherry vinegar, 1/4 tsp of lemon zest, salt and pepper. Then add in the 2 cans of sardines and mush them up with a fork. Set the sardine mixture in your fridge to combine the flavors until you are ready to move forward.



It will look something very similar to what you see below.


After about an hour take your sardine mixture out of the fridge. Then slice up 4 slices of your favorite bread. Brush the tops of the bread with the sardine oil you set aside earlier and set them to broil in the oven for just a few moments until they get toasty brown.



Like you see here. Doesn't that toasty soft bread just put a smile right on your face?


Then mash up one avocado.


Spread a little avocado on a slice of toast. Then spread on the sardine mixture. Squeeze a little lemon over the top and you have nothing left to do besides sit back and enjoy it !!
