chicken sausage, kale, and hominy stew


I had never heard of hominy. Wasn't totally sure what it was and knew I had to try it. I have been obsessed lately with trying recipes that at least have 1-2 new ingredients I have never tried or have heard of.

To me that is the beauty of cooking. Always experimenting with techniques and new ingredients. You have to be happy with what you are eating while becoming conscious of exactly what you do and do not put in your body.

This chicken sausage, kale, and hominy stew is incredible. It is completely filling and complete nutrition in a bowl. I am in love with it and feel even better that it has everything I look for in a complete meal.

Start off by chopping one onion and a batch of green onions.


Then add in 4 chicken sausage links and break them up with the back of a wooden spoon.


Then add 4 cups of chicken broth, the juice of 1/2 of a lemon, the juice of 1 lime mixed with equal parts of water, 8 cloves of garlic minced and a handful of dried cilantro.


Then break out your hominy beans !!


Add the hominy and 1 whole can of fire roasted tomatoes.


Then add 4 cups of chopped kale leaves.


Mix them into the stew and cover a for 3-5 minutes so it can steam through.


Serve up your stew with a dollop of sour cream on it and you cant go wrong !!!
