yip yips

I am not quite sure why this recipe was called yip yips. They are basically healthy sloppy joes and boy are they good.

You first start off by chopping one onion and saute for 3-4 minutes until it is fragrant and translucent.


Then add one chopped red bell pepper to the onion and saute that for a couple of minutes. Then add 4 cups of chopped spinach.


Then stir up the mixture until it is cooked through like in the picture below.


Then add in one pound of ground beef or ground turkey. Then cook the meat through until there are no pink parts any longer and the juices have run thin.


Once it is cooked through add in 1 cup of ketchup and stir in.


Then serve up your veggie sloppy joes on some low fat hamburger buns and you have a wonderful dinner.


I served it up with some baked green beans and carrots and it was a perfect meal!
