Mediterranean Bulgar Salad

My husband has been eating vegetarian for lunch for quite some time and only eats meat with dinner. The good thing is because my husband is doing this my already healthy lunches have become even healthier. Most weeks I make some sort of bean salad. After awhile it gets a little boring so I decided to try this recipe I found on a food blog Feelgoodeats. It is a delicious Mediterranean Bulgar Salad that is extremely nutritious and filling at the lunch time hour.

You first start by submerging 1 cup of medium coarse Bulgar in 2 cups of boiling water. Let it sit for 30 minutes and it will become a delicious chewy grain that has soaked up all the water.


While the bulgar is soaking chopped a head of parsley, 2 cups of sundried tomatoes, 1/2 cup of calamatta or black olives, 1 cup of feta cheese, 1 cup of red onion and place in a bowl then set aside.


Then mix up 1/4 cup of evoo, 2 tbs of lemon juice, 1 tbs of red wine vingear and some salt and pepper. Then whisk it up and set aside.



Once the bulgar has soaked up mix up everything in one bowl and refrigerate!
