The Best Birthday Cake ever !!! Tres Leches redefined

I made this delicious cake for a friend's birthday at work. She was certainly pretty happy when she walked into work and found this amazing cake waiting for her. This is basically a mission of mine to constantly make things I have never tried before but have always wanted to. That is an endless challenge I make for myself. Its great fun trying to always enhance your capabilities as a cook. That is Tres Leches Cake for sure. It is unbelievably moist cake and you wont seriously ever regret it in your entire life that you tried this recipe. It is a long one so bare with me and lets get started.

This tres (three) leches (milks) cake is nothing short of A-M-A-Z-I-N-G !!!

Start off by combining 1 cup of all purpose flour and 1 1/2 tsp of baking powder into a bowl. Add in 1/4 tsp of salt and set it aside.


Now, separate 5 whole large eggs into 2 separate bowls.


Beat the egg yolks in a separate bowl with 3/4 cup of sugar until it is a pale yellow color.



Add in 1 tsp of vanilla.


Then add the egg yolk/sugar mixture to your flour mixture from before. Stir to incorporate the ingredients.


Then beat the egg whites on high until soft peaks form.


Then add in 1/4 cup sugar until firm peaks form.


Now here is the slightly tricky part, but its easy if you take your time with it. Take your egg white mixture and pile it onto of the batter mixture. Then carefully and lightly fold in the egg whites to your cake batter. Just give it the lightest of touches and you will seriously have no problem.


Now preheat your oven to 350 degrees and coat a 9 x 13 baking pan with baking spray. Pour in your cake batter and spread it around evenly so you have a nice and smooth cake top. Bake your cake for 35 minutes. Test it with a toothpick when you take it out just to be sure its done.


Combine one can of evaporated milk, one can of sweetened condensed milk, and 1/4 cup of heavy cream in a separate pitcher.


When your cake is cool poke several holes in it with a fork. Then pour and drizzle all but 1 cup of the milk mixture into the cake. Be sure to get it all around the edges so you don't have portions of your cake that are dryer than others. Be sure to allow your cake to rest for 30 minutes to let the whole milk mixture absorb nicely into the cake. If you rush it the cake may turn out mushy.


Then combine 1 pint of heavy cream with 3 tbs of sugar until it becomes frothy and beautiful whipped cream.


Now frost your cake with the whipped cream and add on maraschino cherries to the top.


This cake is UNREAL!!! Its so moist, tasty, not super sweet, and exactly what anyone would want for a birthday cake !!!
