asparagus goat cheese tart

Sorry I have not posted for a couple of days. I have been pretty sick and out of work for a couple of days and haven't done anything major besides sleep.

I have always wanted to try my hand at a goat cheese asparagus tart. I thought it would be incredibly difficult managing the puff pastry, but it was no issue at all. I am tired of being intimidated by recipes. There is no reason to be. As long as the recipe has few ingredients and seems relatively simple there is no reason why you shouldn't try it. Especially if it looks as pretty as this does !!

You start by laying out one sheet of puff pastry. Leave about a 1 inch border around the edges. Then use a fork to poke holes in the center to prevent that area from puffing up. Then bake it without anything else for 15 minutes at 400 degrees.


Take your clean shell out of the oven and spread your herb goat cheese in the middle of the tart.


Then arrange your asparagus in the middle. Sprinkle some salt, pepper, and some lemon zest on top.


Then bake it for 20 to 25 minutes at 400 degrees. Let it cool for about 5-7 minutes before serving. Enjoy with more vegetables and maybe some lean protein like in the picture below and you have yourself a well balanced meal.
