Lunchtime Quinoa Veggie Salad

This is one of the most satisfying salads I have made in a long time. It is perfect to take to lunch during the work week. It is filling because of the quinoa (keen-wa) and nutritionally balanced because of all the veggies in it.

You need to start by chopping up your basics
1. 1 medium red onion minced
2. 4 ribs of celery chopped
3. 1/2 of a cucumber seeded and chopped
4. 3 carrots peeled and chopped


Then you must add the following:
1. 1/2 cup of sliced large green olives
2. 1/2 cup of crumbled feta
3. 3/4 cup of sundried tomatoes packed in oil (drain the oil as much as you can)


Mix that all thoroughly together then add one batch of cooked quinoa. One batch of cooked quinoa is about 1 cup of quinoa with 2 1/2 cups of water boil on the stove top until all the water is absorbed.

Then in a separate dish mix 1/4 cup of evoo with 3 tbs of red wine vinegar. Whisk it together until it combines thoroughly then drizzle over the salad and mix through. Add some salt and pepper and add it to a reusable container for lunch the next day and you will love it I assure you.
