Mom's Lemon Chicken

makes the most insane lemon chicken!!!

It is amazing and incredibly satisfying anytime of year. She has been making it since my brother and I were little and I recently had the opportunity to get the recipe.

Begin by pounded 3-4 chicken breasts flatten them out nice and good so they will cook evenly.  

Then place 1/2 cup of flour in a pan with some salt and pepper.  Then crack a couple of eggs into another pan. 

Then begin to zest 3-4 lemons into another dish.  It may seem excessive, but I assure you it is totally worth it !!

Dredge the chicken through the eggs and let all the excess drip off then dredge it through the flour.  Then pour 2 tbs of olive oil into a frypan.  Place each chicken breast in the pan and brown it on both sides.   Then place the browned chicken into a baking dish.  Then add 3 tbs of brown sugar on top of each chicken breast.  Then add all of the lemon zest on top. 

Bake it in an oven for 20 minutes at 350 and you will have one happy family !!!
